Vanilla Cupcakes





VANILLA CUPCAKES

Ingredients :

1 1/2 cups self-raising flour
1 1/4 cups flour1 cup butter ~ room temperature
2 cups icing sugar
1 cup fresh milk
4 eggs
1 teaspoon vanilla essence

Method :

1. Sift both flours.
2. Cream butter and sugar till fluffy.
3. Add in eggs, one at a time. Continue beating.
4. Add in vanilla essence and milk. Mix well.
5. Fold in flour till well mixed.
6. Spoon some bater into the muffin pan layered with papercups.
7. Bake in a preheated oven at 180 C for 20 - 25 minutes or till done.

Sweet Bun (Mat Gebu)




SWEET BUN

Ingredients :

400 g bread flour (high-protein flour)
100 g cake flour
100 g sugar
5 g salt
20 g milk powder
1/4 teaspoon bread improver
1 egg (grade B) ~ lightly beaten
11 g instant dried yeast
40 g shortening
250 g water (lukewarm)
Filling of your choice

Method :

1. Sift bread flour, cake flour, salt, milk powder and bread improver into a mixing bowl. Add in yeast, sugar and eggs. On the mixer.
2. Pour in lukewarm water a little at a time until just mixed.
3. Add in the shortening and continue kneading till a soft and smooth dough is formed. Add more water if needed.
4. Make into one round ball and leave to prove till double the size.
5. Punch down the dough to release air and make into small balls. Let it rest for 10 minutes.
6. Flatten the dough and place the filling in the middle. Cover the filling with dough.
7. Arrange on a lightly floured baking tray. Leave to prove till double the size.
8. Bake in a pre-heated oven at 180 C for 20 - 30 minutes. 9. Once out of the oven, brush the buns with margarine.

True Sponge Cake






TRUE SPONGE CAKE

Ingredients :

6 egg whites
6 egg yolks
1 cup sugar
1 tablespoon lemon juice
1/2 teaspoon grated lemon zest
1 cup flour

Method :

1. Beat the egg whites till stiff. Set aside.
2. Beat the egg yolks till thick and lemon colored.
3. Add sugar gradually then add the lemon juice and rind.
4. Cut and fold in the sifted flour.
5. Cut and fold in the stiffly beaten egg whites.
6. Bake in an ungreased pan in a very moderate oven 300 - 350F

Roti Naik





ROTI NAIK

Ingredients :

700g high protein flour
50g shortening
200g lukewarm water
200g evaporated milk (I used fresh milk)
100g castor sugar
1 teaspoon salt
1 packet instant yeast (11g)
2 nos egg
a bit of margarine

Method :

1. Sift flour into a mixing bowl. Add in yeast, sugar, salt and eggs. On the mixer.
2. Pour in evaporated milk and lukewarm water a bit at a time until just mixed.
3. Add in the shortening and continue kneading till a soft and smooth dough is formed. Add more water if needed.
4. Make into one round ball and leave to prove till double the size.
5. Punch down the dough to release air and make into small balls. Arrange in a greased pan and let it prove again till double the size.
6. Bake in a preheated oven at 180 C for 20 to 30 minutes.
7. Once out of the oven, brush the top with margarine. Serve with curry or serikaya or jam or whatever to your likings.



Serikaya



SERIKAYA

Ingredients :

6 eggs
3 cups coconut milk
450g sugar
3 tablespoons flour

Method :

1. Beat eggs and 150g sugar till light and fluffy.
2. Add in the coconut milk and flour. Stir well.
3. Make caramel out of the balance 300g sugar.
4. Pour into the egg mixture and cook on medium heat till done. I cooked for about 1/2 hour.
